2018 was a cool, near perfect vintage on the Central Coast including Paso Robles. We had an unusually cool Spring with lots of gentle rain and fog. It was a warm, pleasant summer with clear warm days and cool nights which helped the fruit develop a full spectrum of flavors.
The grapes for this wine were farmed at the Pine Hawk Vineyard on the east side of Paso Robles. This vineyard was certified organic and Demeter Certified Biodynamic through 2018.
The Cabernet was de-stemmed and punched down twice a day and pumped over once a day. It was aged in 40% new French Ermitage barrels for twenty-two months prior to bottling.
The wine is full bodied and rich with a velvety texture and good balance. It exhibits classic cassis aromas with deep ripe plums and blackberry flavors layered with warm spices, savory notes and hints of cigar box and sage.
